The Beef
Our beef program is built on Ontario and Canadian beef, alongside a strong commitment to Argentinian beef. We also feature Wagyu from Japan and select programs from Australia, New Zealand, and Canada when available.
We work with specialist butchers who age whole primals in large cabinets before select cuts are brought in-house for further development. Beef changes with season, climate, and feed—we cook with those differences in mind rather than trying to make everything taste the same.

How We Cook Steak
When steaks hit the grill, we keep it direct.
Seasoned with salt—including Vancouver Island sea salt—cooked over high heat, and rested properly. No heavy marinades. No masking flavours. Just attention to doneness, timing, and temperature.
That simplicity is intentional: it lets the beef speak, whether it’s Canadian, Argentinian, or Wagyu.

Yes, we charge a $35 corkage fee per bottle, and there is a $5 per guest cake cutting fee. Corkage is free on Monday nights. Keep an eye out for special ‘free corkage’ events and evenings by joining The Fox Club.
